Choy Sum & Beansprouts Stir-Fry

Ingredients
  

  • 500 g coy sum (chinese vegetable), cut
  • 250 g beansprouts
  • 3 tbsp Indonesian sweet soy sauce / kecap manis
  • 400 ml water
  • 1 tsp vegetable broth powder (optional)
  • 1 tsp salt or to taste
  • 1 tsp sugar or to taste
  • 2 tbsp vegetable oil

For seasoning

  • 2 pc large red chillies, sliced
  • 3-5 pc small red chillies/bird chillies, sliced (optional, if you like it more spicy)
  • 5 pc shallots, finely sliced
  • 2 gloves garlic, finely sliced

Choy Sum & Beansprouts Stir-Fry

Stir-Fried vegetarian dish, a simply recipe for you who doesn't have much time to cook or just simply overwhelmed by complicated adventurous recipes :-). This is one of Indonesian variants of stir fried dish with common ingredients : chili, shallot and garlic with a touch of kecap manis, an authentic indonesian sweet soy sauce.
Tips: Use a good quality of kecap manis to get an optimum result. A simple trick to recognize it's authenticity : Just shake the bottle downside, if the sauce has a thick, almost syrupy consistency then you get it right. If it flows like water then never think a twice to even try, otherwise you will ruin the taste!
And another secrets of making a delicious asian stir-fried dish. 1st. Sufficient spice ingredients, means more is better than less. 2nd. Saute the seasoning/spice ingredientss until well cooked and you can smell the good distinctive aroma, then add main ingredients to be cooked.

Instructions

  • Peel off (if necessary) & prepare all sliced ingredients for the seasoning: shallots, garlic & chillies.

  • Wash and cut choy sum in 5 cm/2 inches length, separate the stems and leafy parts. Put aside.

  • Heat 2 tbsp of cooking oil over medium heat in a fryingpan/wok, saute shallot and garlic until translucent & fragrant.

  • Add chilli and stir continuously until well cooked and you smell a good aroma. ( Tips: Add a bit salt immediately if the chili's fumes causes you coughing uncontrollably).

  • Add the stem parts of choy sum, stir briefly until slightly wilted.

  • Add 400 ml of water, soy sauce and broth powder (if used).

  • Cook until the water boils then add the leafy parts of choy sum.

  • Add the bean sprouts immediately, cook briefly until wilted and not overcooked (about 2 minutes).

  • Adjust the taste, add salt and sugar if necessary. Remove from heat and serve hot with "Fried Tofu & Tempe".
