Shrimp & Vegetable Pickle
Origin: Kupang – East Nusa Tenggara Province
Ingredients
- 400 gr large sized shrimps, peeled
- 2 pc of middle sized cucumbers, discard the seeds, roughly sliced
- 1 pc tomato, discard the seeds, dice
- flat leaf parsley, roughly chopped
- 1 tbsp vinegar
- 2 tsp sugar
- a pinch of pepper
- ½ tsp salt or to taste
- 200 ml water
- vegetable oil
Seasonings
- 4 pc large red chillies, thinly sliced
- 50 gr asian shallots, thinly sliced (replace with french shallot if not available)
- 2 cm fresh ginger, thinly sliced
Shrimp & Vegetable Pickle
There are many varieties of Indonesian pickles, such as cucumber & carrot pickle, Madurese vegetable pickle and many more.In Indonesia, pickles are usually served as a condiment for fried rice, savory meat pancake (Martabak Telur) & various seafood dishes.A famous variant among them is "Acar Kupang" or Shrimp & Vegetable Pickle which originated from Kupang, the capital city of East Nusa Tenggara Province.The combination between shrimps, cucumber and tomato blend in sour-spicy dressing, makes this pickle a simply unique in taste & flavours ;-).
Instructions
- Peel-off and devein the shrimps /if necessary and rinse under running water. Put aside.
- Cut the cucumber in half lengthwise, use a spoon to discard the seeds.
- Slice the cucumber about 1 cm thick. Put aside.
- Cut the tomato in half, discard the seeds & cut in dice.
- Peel-off (if necessary) and slice the seasonings ingredients: chilis, shallots and fresh ginger. Set aside.
- Heat 2 tbsp oil in a frying pan and saute the seasoning ingredients.
- Stirring all the time until fragrant and well cooked (approx. 2 minutes).
- Add the shrimps, Stir quickly until the shrimps become harder & it's colour turns to whiten.
- Add the water and bring to boil over medium heat. Switch off the stove and remove from heat.
- Add salt, sugar, pepper and vinegar/wine vinegar. Stir to mix
- Add the sliced cucumber and tomato. Stir throughly to mix.
- Adjust the taste, add salt, sugar or vinegar if necessary.
- Let it cool for about 15 minutes for the sesonings to seep into the pickle.
- Last but not least, add flat parsley as a garnish. Serve right away.
