Baked Fish in Sweet Soy Sauce

Ingredients
  

  • 2 pc Dorade, Tilapia or other sort as preferred, cleaned
  • juice of 1 lime or lemon
  • 2 stem lemon grass, outer leaves discarded, finely chopped
  • 2 pc kaffir lime leaves, finely sliced
  • 2 cm galangale, thinly sliced

Spice for the paste

  • 4 pc shallots, chopped
  • 3 gloves garlic, chopped
  • 5 pc candlenuts, crashed or roughly chopped
  • 1 tsp coriander powder
  • 2 cm fresh ginger, peeled
  • 2 cm fresh turmeric, peeled
  • 1 pc large red chilli, chopped
  • 1 tbsp thick tamarind water (1 tsp tamarind pulp soak in 1 tbsp water)
  • 1 tsp salt or to taste

For sauce, to be mixed

  • 5 tbsp Indonesian sweet soy sauce / kecap manis
  • 1 pc shallot, finely sliced
  • 1 pc tomato, sliced

Baked Fish in Sweet Soy Sauce

Use fresh fish to get the best result. When it is not obtainable you can also take frozen fish but make sure the fish is defrosted properly.

Instructions

  • Put the fish in a bowl and mix with salt and lime juice.
  • Keep aside for 15 minutes. Rinse under cold water and pat dry with kitchen paper.
  • Blend all ingredients for the paste in a blender or food processor until smooth.
  • Add the lemon grass, kaffir-lime leaf & galangale. Stir to mix.
  • Put the fish into Pyrex dish or baking pan.
  • Rub the paste on the whole fish in and outside. Keep aside in a fridge for 30 minutes.
  • Preheat oven to 375°F (190°C). Bake the fish for about 25 minutes.
  • Adjust the seasoning (sliced tomato) & pour in the sauce on the whole fish.
  • Continue to bake for another 5 minutes until well cooked or easily flaked with a fork.
  • Serve the fish right away with potato and vegetable salad.
