Hot Chicken Dish
Origin: Indonesia
Ingredients
- 1 kg chicken, cut in pieces, washed
- 4 pc juice of 4 limes or lemon
- 4 pc tomato, quartered
- 10 pc kaffir lime leaves, finely sliced
- 4 stem lemon grass, outer leaves discarded, finely chopped
- 5 pc scallions or spring onions, in 1 cm long chopped
- 20 pc small red chillies / bird chillies
- 2 tsp sugar
- 2 tsp salt
- 250 ml water
- 2 pc bunch or a handfull of basil leaves
Spice for the paste
- 10 pc shalllots, chopped
- 7 pc large red chillies, de-seeded, chopped
- 5 gloves garlic, chopped
- 3 cm fresh ginger, peeled
Hot Chicken Dish
It's HOT but DELICIOUS, especially for chilli fans 😉
Instructions
- Put the chicken in a bowl and mix with lime or lemon juice. Keep aside for 30 minutes.
- Blend all ingredients for the spice paste in a blender or food processor until smooth.
- Transfer the paste into a large saucepan or a wok. Add tomato, kaffir lime leaves, lemon grass, spring onion, small red chilli, sugar then pour in the water.
- Cook with maximum heat until the chicken's colour turn to white.
- Turn the heat into medium, cover the wok, simmer untill the chicken well cooked.
- Adjust the seasoning. Add in basil leaves, stir and lift. Serve right away.
