Fried Fish Dish from Southeast Sulawesi
Origin: Southeast Sulawesi Province
Ingredients
- 3 pc long jawed / Indian mackerel
- 1 pc lime, saved the juice
- 1 stem lemon grass, outer leaves discarded, bruished
- 1 tsp tamarind pulp, soak with 3 tbsp water
- salt or to taste
- 50 ml oil for frying
Spice for the paste
- 5 pc shallots, chopped
- 3 gloves garlic, chopped
- 5 pc large red chillies, de-seeded, chopped
- ½ tbsp palm sugar
- ½ tsp roasted / fried dried shrimp paste/terasi
Fried Fish Dish from Southeast Sulawesi
This is another variant of an Indonesian fried fish dishes from Southeast Sulawesi, namely: Parepe Ikan. "Ikan" in Indonesian language means "fish". This is as simple recipe but it taste delicious, good for chilli lovers ;-).Note: In Sulawesi the fish is usually grilled on a charcoal then topped-up with chilli paste relish. But some recipe also suggest that the fish could be fried instead of grilling. Here I fried the fish due to simplicity & efficiency. You can use whatever method which suits your preference. The result is always good.
Instructions
- Clean the fish & discard all the entrails. Rub the lime juice onto the fishes. Put aside for 15 minutes.
- Heat 50 ml oil & fry the fish from both side until golden brown. (Or grill the fishes in a electric gril until the fish is lightly brown & tender). Set aside to drain.
- Put all ingredients for the paste in a grinding stone or blender and grind/blend into smooth paste. (If necessery add a little bit oil to help the blending process).
- Re-heat 2 sdm of used oil. Stir fry the paste & lemon grass over medium heat well cooked & fragrant. ( takes about 5 minutes)
- Add the tamarind juice. Stit to mix. Adjust the seasoning, add the salt to taste.
- Add the fried fish, stir carefully until the fish is covered with the paste. Serve Your Fried Fish Dish from Sulawesi hot as a side dish.
