Sambal for Black Beef Soup

  • 8 pc large red chillies
  • 3 pc small red chillies / bird chillies
  • 1 pc big-size tomato, raughly chopped
  • 1 tbsp roasted shrimp paste / terasi
  • ½ tsp sugar
  • 3 pc kalamansi (jeruk limau)) or half of lime, use the juice
  • salt or to taste

Sambal for Black Beef Soup

This sambal is usually served together with "Black Beef Soup". Boil or steam chilies to help the grinding process. Keep away tomato from boiling to get freshly sambal.


  • Boil or steam all chillies for about 5 minutes until the chilies get soft.
  • Put large & bird the chillies in a grinding stone (ulek-ulek) or use mortar & pestle and grind until smooth.
  • Add chopped tomato, grind until smooth.
  • Add the roasted shrimp paste, grind them once again. Stir to mix.
  • Adjust the seasoning, add the salt & sugar (if necessary).
  • At last, add the kalamansi or lime juice. Stir to mix. Serve right away with "Black Beef Soup".
