Steamed Shrimp Paste Sambal
Origin: Java Island
Ingredients
- 5 pc large red chillies, chopped
- 5 pc small red chillies / bird chillies
- 1 pc mid-size red tomato or 3 cherry tomatoes
- 1 gloves garlic
- 2 tsp roasted / fried dried shrimp paste/terasi
- ½ tsp sugar
- salt or to taste
Steamed Shrimp Paste Sambal
You'd like to make large amount of sambal but doesn't have lust to grind raw chilies?? 😉 Just try this version of sambal terasi. I make it also when I am too lazy to pound large of chillies ;-). All you have to do just steam the ingredients to soften then shortly grind in a grinding stone or with mortal & pestle. And sambal is ready to serve!!The recipe looks so simple but it's good to burn your mouth ha ha 😉 Good to accompany grilled chicken or other fried side dishes & raw salad.
Instructions
- Steam the chillies, garlic & tomato until they are soft (approx. 10 minutes)
- Transfer all the steamed ingredients on to grinding stone (or mortar & pestle) and grind smoothly.
- Add the roasted/fried dried shrimp paste (terasi), grind again to mix.
- Adjust the seasoning, add salt & sugar to taste. Sambal to be consumed until finish because it doesn't stay good longer as fried sambal.
